Trail Mix Energy Bars

Ingredients:

  • 2 cups rolled oats
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1/2 cup classic energy trail mix
  • 2 tbsp chia seeds
  • 1/4 cup dark chocolate chips

Instructions:

  1. Line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, chia seeds, and classic energy trail mix.
  3. In a separate microwave-safe bowl, heat the nut butter and honey/maple syrup until melted and smooth (about 30-45 seconds).
  4. Pour the wet mixture into the dry ingredients and mix until fully combined.
  5. Fold in the dark chocolate chips.
  6. Transfer the mixture into the prepared baking dish and press down firmly with a spatula.
  7. Refrigerate for at least 2 hours or until firm. Cut into bars and serve.
