Protein-Packed Trail Mix Pancakes

Ingredients:

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 scoop protein powder (optional)
  • 1 egg
  • 1 cup milk
  • 1/2 cup protein power trail mix
  • 1/2 tsp vanilla extract

Instructions:

  1. In a mixing bowl, combine whole wheat flour, baking powder, and protein powder.
  2. In another bowl, whisk the egg, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Fold in the protein power trail mix.
  5. Heat a non-stick skillet over medium heat and pour a scoop of batter onto it. Cook for 2-3 minutes per side or until bubbles form and edges are golden brown.
  6. Serve with a drizzle of honey or maple syrup.
